Last week I started the process of eating out my pantry. I like to keep food in stock in case I need it. However, I am realizing this is a futile effort as I am amassing a pile of nearly expired dry goods that I have no use for.
For the past few weeks I have been spending around $500 on groceries for a family of 3. How does that even happen?!?! I am revolting and decided it was high time I used up the almost stale items I have lying around.
So far I have made Quinoa Fried Rice, Barley Lentil Soup, Hamburger Orzo, Muffins, and today the Piece De Resistance - 7 Layer Taco Dip. We horked that sucker down like ravenous monkeys. Who would have though that a half bag of dried Pinto beans could turn me into mom of the year? My 5 year old loved it and renamed it the "Stuff your face taco buffet." We all had stomach aches after from eating so much, but don't be turned off, it was well worth it.

7 Layer Taco Dip
Ingredients
2 cups refried beans
2 Tablespoons taco seasoning
8 ounces sour cream
4 ounce cream cheese
16 ounce guacamole
8 ounce salsa
2 cups shredded lettuce
Large tomato, chopped
1 cup shredded cheese
Directions
In a medium bowl, mix refried beans and taco seasoning. The spread evenly on the bottom of any dish approximately 9x9".
Cream together sour cream and cream cheese. Spread on top of refried beans.
Then layer guacamole, salsa, cheese, lettuce, and tomato, - in that order.
I made my own refried beans by cooking pinto beans overnight in the slow cooker and then mashing with a potato masher. I also made my own guacamole with 2 avocados, fresh garlic, lime juice and salt to taste.
